I love Paradox games but I've avoided Stellaris for now - I was worried it would follow the pattern of a lot of their recent releases, and would need a few DLC to flesh it out. Some of the reviews say that it does feel a bit barebones in the mid game. Is it actually worth getting on board with early?
Crusader Kings, though... man, the most recent patch is excellent, I've been playing nothing else. Playing as a hedonistic, attractive Indian queen, I pushed my 9-year old sister off a balcony to force-inherit an empire, then dealt with the (rightly) rebellious subjects by aggressively seducing them. My most successful game to date, and I did it by basically fucking an empire into submission. Now *there's* a candidate for an AFW universe mod...
I love Paradox games as well. I haven't had a chance to play Crusader Kings yet, which is a shame, because I fucking love reading all the stories of what people did. I thought your story was goddamn excellent. Did you ever hear about giving birth to the anti-Christ?
I used to play EU III and EU IV a lot, but I have given them a bit of a break. EU IV updates too quickly and wrecks my save state, and it is hard to play without all the DLC's.

I've been a pretty loyal Paradox player for a long time (well, okay, not that long, but I've been playing their games for at least seven or eight years), and Stellaris is probably my favorite game of theirs. The caveat, of course, is that the only books I ever read are science fiction, so when Paradox came out with a space game, obviously I would like it a lot. It does seem a little barebones in the middle, definitely, but I'm the sort of player who plays their games on Slow and typically avoids conflicts as much as possible, so I think the game experience may be different if you play more aggressively. My brother's played 4-5 games of it, including multiplayer, and his games have never slowed down the way mine has. Personally, I've always liked the exploration and discovery aspects best of any game (all the Star Trek sort of stuff, which Stellaris is front-loaded with), so I may be more bored than others might be. It does seem to me that they need to tweak some of the endgame a little bit, as the victory conditions are completely broken and imbalanced. And it wouldn't hurt to add more of the anomalies that are so frequent in the early game into the later game. But, overall, it really is worth buying, especially if you can get a deal on it (I think Steam is selling Paradox games at a discount right now, so this would be the time).

I had an anti-christ kid once, at least a suspected one, when the little prick started murdering his siblings and hanging out with witches. I think I had him murdered before he could reach adulthood though. Some of the writing in CK is laugh-out-loud brilliant, and it's had around five years of content updates to flesh it out. Feels like CK has moved past the "constant tweaking" stage that still blights EUIV (I got a free copy of EUIV off Paradox but barely play it, for the reasons you mention). I still think I will hang back on Stellaris until it has a few DLC and a 50% sale, even though I'm confident it'll grow into something as good as CK.

The only reason I played EU IV (as well as EU III) so dang much was because I preferred the time period. The Age of Sail is really cool to me, and you can see a lot of the modern world coming about throughout the time period. For what it is worth, I played Empire: Total War a whole heck of a lot too, despite the fact that the game was sheer garbage. The Paradox fellas are pretty clever, as you mentioned. It doesn't show as much in EU IV, which is a bit of a shame. One of the cool things about CK II is that you are a character, EU IV is just a name that you get bird and sword mana from.
